Properties of Vitamin E

Vitamin E is the term for a group of eight different compounds: α-, β-, γ-, and δ tocopherols and the corresponding four tocotrienols (α-, β-, γ-, and δ). Each form has its own biological activity, the measure of potency or functional use in the body.

α-tocopherol is the most active form of vitamin E in humans, and is a powerful biological antioxidant. It is the major lipid soluble found in cells.

The antioxidative properties of vitamin E have been found to play a vital role in the battle against various diseases such as atherosclerosis, oxidative stress, cancer, and cataract, among others.

Due to the potent antioxidant properties of tocopherols, the impact of a-tocopherol in the prevention of chronic diseases believed to be associated with oxidative stress.

Antioxidants of vitamin E act to protect body cells against the effects of free radicals, which are potentially damaging by-products of the body's metabolism. Vitamin E serves as one of the body’s chief defenses against damage by free radicals.

γ-tocopherol might have functions apart from being an antioxidant. It is a nucleophile able to trap electrophilic mutagens in lipophilic compartments and generates a metabolite that facilitates natriuresis.

The tocopherols are viscous oils at room temperature, insoluble in water but soluble in ethanol and aprotic solvents. Vitamin E is a slightly yellow to amber, nearly odorless, clear, viscous oil, which darkens on exposure to air or light by oxidation.

Most notably, vitamin E prevents the oxidation of the polyunsaturated fatty acids, but is protects other lipids and related components (e.g. vitamin A) as well.

Vitamin E also possesses anti-cancer properties. Phytochemicals in cocoa

Cocoa powder and chocolate are rich dietary sources of phytochemicals. The main ones, in terms of quantitative composition, are proanthocyanidins and purine alkaloids.

Other minor compounds include flavonoids, anthocyanins, phenolic acid amides and stilbenoids. Cocoa beans have been found to have more phenolic phytochemicals per serving than teas and red wine. Scientists discovered 611 mgs of the phenolic compound gallic acid equivalents (GAE) and 564 mgms of the flavonoids epicatechin equivalents  (ECE) in a single serving of cocoa.

Cocoa phytochemicals have strong antioxidant and anti-inflammatory activity. Cocoas beans contain significant amounts of theobromine (2.2-2.8% of dry weight), together with smaller amounts of caffeine (0.6-0.8%). Cocoa nibs are reported to contain 10 grams of phytonutrients for every 100 grams of beans.

These alkaloids are preserved in cocoa powder and easily extracted during the preparation of cocoa beverages. In 100 grams of processed cocoa powder there are approximately 5 grams phytonutrients.

These phytochemicals have been linked to a reduced risk of heart disease cancer and inflammation.

Polyphenols can reduce risks of Alzheimer's disease

Polyphenols are micronutrients present in abundance in human diet. Polyphenols are probably the most investigated compound of nutritional interest.

Fruits, vegetables, beverages (such as tea, wine, juices) and some herbs are loaded with powerful antioxidant polyphenols. In August 2006 The American Journal of Medicine published a study concluding that drinking fruit and vegetables juice reduced the likelihood that a person will develop Alzheimer’s disease.

Researchers involved in the study believe that polyphenols class of antioxidants in fruits and vegetables, seem to have a protective effect on the brain, reduce the likehood of dementia and prevent the development of Alzheimer’s’ disease.

Research published J Cell Biochem. Oct 2013; 114(10): 2209–2220, shows that cocoa polyphenolic triggers neuroprotective and preventive effect of human Alzheimer’s by increasing the BDNF signaling pathway.

Polyphenols are also found in wine, which is considered to be raw food, and even better if it is organic and vegan. Daily consumption of wine is associated with a lower risk of Alzheimer’s disease.

Coffee also contains substances such as polyphenols. The polyphenols in coffee, just like those in red wine, act as antioxidants and protect the brain against damage and lower a person’s risk of Alzheimer’s disease.

The daily consumption of beverages other than coffee and espresso also has an effect on Alzheimer’s risk.

Antioxidants in fruits

Fruits, berries and vegetables contain various phytochemicals with different bioactivities such as antioxidants activity.

Fruits and berries are good sources of antioxidants, including, carotenoids, ascorbic acid, tocopherols, flavonoids and phenolic acids.

The main antioxidants in fruits are vitamin C or ascorbic acid, which is colorless and the carotenoid and flavonoids families of antioxidants that provide fruits with their orange, yellow, pink, red and purple colors. 

Red, blue, and purple fruits (such as apple, blackberry, blueberry, blood orange, cranberry, grape, nectarine, peach, plum, prune, pomegranate, raspberry, and strawberry) are good sources of flavonoids and other phenolic compounds. They are positively correlated with antioxidant capacity of the fruit.

These anthocyanins inhibit cholesterol synthesis theses fruits provide protection against heart disease. 

Orange-flesh fruits (such as apricot, cantaloupe, mango, nectarine, orange, papaya, peach, persimmon and pineapple) and some red flesh fruits (such as tomato, watermelon and pink grapefruit) are good sources of carotenoids.

Carotenoids are known to enhance immune function. Persons with high blood levels of carotenoids have a reduced risk of heart disease and cancer.

The vitamin E content of fruits is generally low, but seeds and nuts have high vitamin E content.

Fruits, nuts, and vegetables in the daily diet have been strongly associated with reduced risk for some forms of cancer, heart disease, stroke and other chronic disease. This is attributed, in part, to their content of antioxidant phytochemicals.

A study at the Harvard School of Public Health done in 1995 on 48,000 men for 4 years reported that men who ate 10 or more servings of tomato products per week had up to 34% less chance to develop prostate cancer.

Food processing of fruits and berries into juices and jams, and drying of fruits generally result in lower amounts of antioxidants compounds. For example, losses of anthocyanins in juices and purees of strawberries, strawberry and blackcurrant syrups, cranberry juice, raspberry juice and wine.
