Vegetables are important for health. Food from the plant kingdom has always been important to humans.

Veggies contain many vitamins, minerals and other essential nutrients that a body needs to main good health and energy. They help protect against the effect of aging and reduce the risk of cancer and heart disease.

Other essential nutrients in vegetables including carbohydrates, protein, fats, fiber, and various chemical compounds have their own grouping such as alkaloids, essential oil, saponins, tannins, etc.

There are thousands of health promoting phytochemicals in plants. The best advice is to eat a variety of vegetables because each provides different nutrient.

They should be used in their raw fresh form, as is done in case of preparing salads.

Green and leafy vegetables such as collard greens, kale, mustard, turnip and broccoli are important because they contain lutein and indoles. Lutein is a powerful antioxidant that helps to maintain good vision and helps reduce the risk of cataract and other eye probe.

Vegetables help the body to endure, in repairing its defective metabolism, in building up tissue and provides energy.
