Blending flavoring extract with synthetic materials

Flavors are often very complex mixtures of ingredients, whether naturally occurring or created form synthetics and food technologists have gone to great lengths to assure that the blend of synthetic flavors will meet with consumer acceptance.

The flavoring extract may be reinforced with a synthetically produced flavor principle; however, in this case the resulting product must be labeled as containing artificial or imitation flavor.

This labeling requirement holds even though the synthetic ingredient is naturally present in the extract. Any incidental additives which are present in the food at insignificant levels and which do not have any technical or functional effect in that food are exempt from food labeling.

In the United States ‘boosted natural’ flavors are allowed. This means that flavors may contain up to 0.1% artificial (synthetic) flavor components and still be classified as ‘natural’.

Artificial flavors such as artificial cherry, raspberry, strawberry, watermelon and vanilla( can cover up the absence of more expensive ingredients in manufactured foods like mixes and soft drinks.

The spice of cinnamon

Cinnamon was one of the first spices prized and enjoyed by man since the early days of civilization.

Cinnamon is the dried inner bark of various evergreen trees belonging to the genus Cinnamomum. This species is mostly cultivated in Sri Lanka, Malagasy Republic, and Seychelles.  At harvest, the bark is stripped off and put in the sun, where it curls into the familiar form called "quills."

Cinnamon leaf and bark are spices and sources of cinnamon oil, primary from the Cinnamomum verum J. Presl.  The bark, oil and oleoresin are the economically important products. Bark either as small piece or as powder is extensively used as spice or condiment.

Cinnamon in the ground form is used in baked dishes, with fruits, and in confections. Cassia is predominant in the spice blends of the East and Southeast Asia. Cinnamon is used in moles, and berbere.

Cinnamon is also an important ingredient in the Indian spice mix garam masala.

The color of cinnamon is about reddish and brown. It produces sweet and pungent flavor. Cinnamon is characteristically woody, musty and earthy in flavor and aroma.

It is warming to taste. The finer the grind, the more quickly the Cinnamon is perceived by the taste buds.

Commercial production of cinnamon usually begins about 3-4 years after planting and pruning of the stems to force the growth of young stems.

These stems are cut during the rainy season to facilitate the peeling of the bark.

Leavening agents in muffin

There are several kinds of chemical leavening agents but all have the same functional purpose in the making of muffin.

Baked bread leavened by chemical leavening agents are often called quick breads because they can be baked immediately, without waiting for fermentation to take place. Doughnut, biscuits, muffin, are among the quick breads leavened by baking powder.

The amount of baking powder used in muffins varies between 2% and 6% based on flour at 100% with lower amounts in muffins with ingredients that increase acid.

Every chemical leavening agents created and leaven the batter before and/or drying baking. Leaveners cause a dough or batter to rise by producing carbon dioxide, which rises throughout the batter and results in the tenderizing of the product, providing a pleasurable mouthfeel.

The process also make muffin light and easy to chew. During baking, heat increases gas volume and pressure to expand cell size until proteins are coagulated.

Stretching of the cell walls during baking improves texture and promotes tenderness. The products that are leavened have open or more porous grains so that the digestive juices come in contact with the food more readily.

There are two types of leaveners: chemical and yeast. The most common leavening agents used for muffin are baking soda and baking powder.

Salt as food ingredient

Before the days of refrigeration, people relied on salt to preserve many foods. Salt and sodium containing ingredients preserve food by inhibiting the growth of bacteria, yeast and molds and so prevent food spoilage and food borne illness.

What is salt? Salt is used as a condiment or ingredient. It brightens food flavors and facilitates a balance between sweetness and acidity by decreasing the sourness of acid and increasing the sweetness of sugar. 

Salt makes foods taste better by selectively filtering out the taste of bitterness, resulting in the other primary tastes and flavors coming through more strongly.

Salt best known function is to enhance the flavor of foods. People like salt because human bodies need sodium chloride.

Salt is also act as a natural preservative which inhibits the growth of molds and bacteria. It literally pulls the life-sustaining moisture from those harmful bodies, making them unable to grow or reproduce.

In food industry food manufacturers use salt to help form a gel in sausage and other smoked meat products.

Salt of sodium chloride has desirable characteristics form a culinary perspective. Added salt improves the sensory properties of foods that humans consume and is inexpensive. The addition of a small quality of salt enhances other foods bringing a ‘fullness’ to foods that might otherwise is describe as a ‘flat flavor’.

Salt has another crucial property that made it important for the development of human society. By 2000 BC, people knew that adding salt to food stopped it going off. Salt was used to preserve meat, fish and vegetables, and to create delicacies such as salted olives, which added variety to the diet.

Food Ingredients Industry

The food industry has undergone significant changes in this decade. As a result, much of the scientific research work has shifted from food processors to ingredient suppliers. It used to be that food scientists did most of the research on ingredients.

Many ingredients used in food formulation are derived from plant material. The supply of these ‘natural’ food additive is highly dependent upon availability of raw plant material, favorable environmental conditions and efficient/safe extraction procedures.

In the desire to fulfill consumer needs, the food ingredient industry’s rapid advances in food technology during the last decades have stepped up intervention with nature.

Even in times of recession, people need to eat; hence, the food business is more stable than other parts of industry.

Although the overall growth rate of the ingredients industry is low, opportunities for growth in excess of the industry average are present. Industry players segment the market into what might be called macro-categories, for example, beverages, baked goods, dairy, candy/confection and snack food.

The ingredients industry is a huge industry, and food manufacturers rely on the ingredients to enhance food quality.

While there is less basic research being conducted on food, there is more focus on applications research. There is a believe that newer trends in food products, such as the effort to reduce fat content, reduce MSG or reduce salt will keep industry job growth steady.

Aided by sophisticated tool, the ability of flavor chemists to analyze and synthesize flavors has expanded markedly. New knowledge on the texture or mouthfeel 0f virus food has been developed as processors learned that texture is as vital to product acceptance as flavor and color.

With more understanding of food ingredients, the food ingredient industry has developed to enhance the qualities of many foods.

The meaning of food ingredient

Food ingredient is an ingredient in food recipe. It is a component part or constituent of any combination or mixture making up a commercial food. In Wikipedia encyclopedia ingredient means something that forms part of a mixture. For example, in cooking, a recipe will specify which ingredients are used to prepare a specific dish.

Today’s consumers require much more information about their health and what they eat since they want to select their food in accordance with a wide number of criteria – origin of ingredients, processing and and preservations and to understand the reason why such and such an ingredient has been added or a particular process used.

Ingredients are substances intentionally added to food products in relatively large quantities to modify the dietary intake of energy or to serve as a substitute or to replace major dietary components, such as fats and sugars.

Many commercial products contain a secret ingredient that is purported to make them better than competing products. In the food industry, an active ingredient is that part of a formulation that yields the effect required by the customer.

The best ingredients is necessary, especially for cooking or food processing, because the techniques are used to focus attention on flavors, colors, textures and aroma.
