Disaccharide sugar of lactose

In disaccharides, pairs of single sugars are linked together. Three disaccharides are important in nutrition: maltose, sucrose and lactose.

All three have glucose as one of the single sugars.

Lactose is the principle carbohydrate of milk. Lactose gives milk and other dairy products a slightly sweet taste. Most human infants are born with the digestive enzymes necessary to split lactose into its two monosaccharide parts, glucose and galactose so as to absorb it.

Lactose is the only disaccharide that has a beta glycosidic bond between the monosaccharides. It is often referred to as milk sugar and is sometimes added to processed foods.

During lactation, enzymes in the mammary glands combine glucose and galactose to produce lactose. 

Lactose can exist in a number of different physical forms depending on the method of production.

In aqueous solution, lactose exists as an anomeric mixture of alpha and beta forms. In the solid for, lactose usually crystallizes in its alpha form as a monohydrate.

Sugar of fructose

Fructose is so efficient in its sweetening power that is common in commercially prepared foods today as sucrose.

It is a sweetener that is found naturally in fresh fruit and honey. Fructose is a monosaccharide, with five carbon furanose ring structure rather than the six carbon pyranose ring structure of glucose.

Its chemical structure has highly reactive molecules which bind to protein molecules. Fructose is known as fruit sugar or laevulose.

Fructose was first extracted from cane sugar more than a century ago, and it’s found in varying amounts in such fruits as apples, grapes, orange and berries.

Fructose is low in glycemic index, meaning that it releases glucose in to the bloodstream slowly.

Fructose produces liver glycogen rapidly making it a more efficient supply than other sweetener.

Fructose is the sweetest natural saccharide and is approximately 1-1.5 times as sweet as sucrose. It is also water soluble.

Fructose metabolizes at a slow rate, helping to control insulin surges. It is recommended for diabetics and others seeking to control their carbs.

It is in baked goods because it reacts with amino acids to produce a browning reaction. It is used as a nutritive sweetener in low-calorie beverages.

Fructose can be the sweetener of choice in a weight loss diet. Fructose also seems to make eaters pick foods with less fat. 

In dental health studies, less dental plaque was reported with fructose than with sugar.

Some plants including chicory Jerusalem artichokes and dahlias contain appreciable quantities of the polysaccharide inulin, which is a polymer of fructose.

Definition of sugar

Sugar by definition is a sweet crystalline or powdered substance, white when pure, consisting of sucrose obtained mainly from sugar cane and sugar beets. Sugar is widely available and is found in food products such as ketchup, hot chocolate, soda, cakes, pies and candy bars.

In culinary terms, sugar as a type of food delivers one of the primary taste sensations, that of sweetness. 

Refined sugar is the white sugar crystals that is used at home. In the very beginning sugar was not known in its solid form but only as a sweet syrup obtained from sugarcane. Its name originated from the Sanskrit word ‘Sharkara’ which denotes ‘ material in a granular form’.

Sugar or white sugar is made by extracting the juice from sugar cane, filtering, concentrating and purifying it until sugar crystallizes.

For thousands of years sugar has remained an important commodity, or good that can be bought and sold. 

The "simple" sugars, or monosaccharides (such as glucose), store energy which biological cells use and consume. In a list of ingredients, any word that ends with "ose" probably denotes a sugar. For example glucose, fructose and sucrose.

When other sweeteners may be cheaper than sugar, it is still used widely and is preferred sweetener in premium ice cream products. Sugar help to produce a clean, sweet taste in ice cream.

High sugar beverage

Sugar sweetened beverages comes to releasing a large amounts of sugar into the bloodstream. The digestive system breaks down starch to sugar and water, which is what sugar sweetened beverages are to begin with.

At a time when childhood obesity, dietary disorders and the quality of childrens' diet receive widespread media coverage, it is perhaps some comfort to know that few children are likely to suffer from the quantity or content of their diet.

Beverage intake seems to be a major contributor to caloric intake.

Intakes of added sweeteners exceed current dietary recommendations. The USDA recommends no more than 40 grams (about 10 teaspoon) of added sugars per day when consuming 2000 calories.
